This is a super easy and filling midweek meal for busy parents and fussy eaters. You can use this as a starting point and mix & match different fillings; whether you want to stay with the vegetarian option, or add a bit of seasoned diced chicken to make a healthier Gyro, the possibilities are endless.
Haloumi & Mixed Salad Wraps

Ingredients
- Tortilla wraps
- Garlic Mayonnaise
- Haloumi cheese
- Mixed Herbs
- Salad leaves
- Tomato
- Cucumber
Method
- Take the wrap and cut once from the centre to the edge, picture the wrap in quarters now. On one quarter spread garlic mayo, on the other some slices of cucumber, on the next a few slices of tomato. Leave the final quarter empty; this will give you a little pocket to put the haloumi and salad in. Fold the wrap onto itself so it makes a cone shape and put to one side until the haloumi filling is ready.
- Dice and coat Haloumi in olive oil and oregano then either fry or bake until it is golden Brown (keep it moving to ensure it doesn’t stick).
- Serve with a little cous cous and vegetables to keep it super healthy, or you could cook off a few homemade chips as a treat.
